Brisket Cook Time Calculator
Estimate how long to smoke a beef brisket by weight and smoker temperature, including the all-important rest, and work back to a start time for your dinner.
How it works
Cook time = weight (lb) × minutes-per-lb (90 at 225 °F, 75 at 250 °F, 60 at 275 °F) · Total = cook time + rest
Brisket cooks by time-per-pound because heat has to render tough collagen into gelatin, which happens slowly around 200 °F internal. Lower pit temperatures need more minutes per pound but give a wider margin for error, while 275 °F "hot and fast" trims hours off. The estimate is deliberately generous because every brisket hits a "stall" — a plateau near 150–170 °F where evaporative cooling stalls the temperature for an hour or more — so always start early and hold the finished brisket wrapped in a cooler rather than rushing it.
Worked example
A 12 lb trimmed brisket at 250 °F: 12 × 75 = 900 minutes, or about 15 hours of cook time. With a 60-minute rest that is roughly 16 hours from lighting the smoker to slicing — so a 6 pm dinner means starting around 2 am, plus a stall buffer.
Frequently asked questions
Why does brisket take so long per pound?
Brisket is full of connective tissue that only breaks down into tender gelatin when held at a high internal temperature (around 200–205 °F) for a long time. Rushing it leaves the meat tough, so low pit temperatures and long times are the point, not a delay.
What is the stall and should I plan for it?
The stall is a plateau, usually between 150 and 170 °F internal, where surface moisture evaporates and cools the meat as fast as the smoker heats it. It can last one to three hours. Wrapping in foil or butcher paper (the "Texas crutch") pushes through it faster; always budget extra time.
Do I really need to rest a brisket?
Yes. A rest of at least an hour lets the muscle fibers relax and reabsorb juices, and holding a wrapped brisket in a warm cooler for one to four hours actually improves texture. Slicing straight off the smoker spills the juices and gives a drier result.
