How it works
grams = cups × grams per cup (ingredient density) · ounces = grams ÷ 28.35
Cups measure volume, grams measure weight, and the bridge between them is density — which is different for every ingredient. A cup of packed brown sugar (220 g) weighs two and a half times a cup of cocoa powder (85 g). The densities here follow standard US baking references, assuming flour is spooned and leveled rather than scooped.
Worked example
One cup of all-purpose flour weighs 120 g, about 4.2 oz. The same cup filled with granulated sugar would weigh 200 g — same volume, very different weight.
Frequently asked questions
Why do bakers prefer weight over cups?
Scooping technique alone can swing flour by ±20%, which is the difference between tender and dense. A scale removes the variable entirely and makes recipes repeatable.
Are weight ounces the same as fluid ounces?
No. Fluid ounces measure volume (a cup is 8 fl oz for any liquid); weight ounces measure mass. A cup of milk is 8 fl oz but weighs about 8.5 oz — for water-like liquids they’re close, for everything else they diverge.
Do these numbers work for UK or Australian recipes?
Careful — a US cup is 236.6 ml, a metric cup is 250 ml, and an Australian tablespoon is 20 ml instead of 15. For non-US recipes, convert via the gram weights the recipe lists, not cup-to-cup.
