What is a gas mark?
A UK oven dial scale where each mark is about 14 °C apart. Gas mark 4 is roughly 180 °C.
Is fan oven different?
Yes — fan (convection) ovens run about 20 °C hotter, so reduce the set temperature by ~20 °C.
