Pressure Cooker Time by Altitude Calculator

Adjust pressure cooker cooking time for high altitude — thinner air lowers the internal temperature, so food takes longer to cook the higher you are.

How it works

Extra % = (altitude − 2,000 ft) ÷ 1,000 × 5% (0 below 2,000 ft) · Adjusted time = base time × (1 + extra %) · Boiling point ≈ 212 °F − altitude ÷ 500

A pressure cooker works by trapping steam so the internal temperature climbs above the normal boiling point — but that ceiling is set by the atmospheric pressure it starts from. At altitude the air is thinner, water boils cooler, and the sealed cooker reaches a slightly lower peak temperature, so food cooks more slowly. The common kitchen rule is to add about 5% to the cooking time for every 1,000 feet above 2,000 feet. Below 2,000 feet the effect is small enough to ignore. Time, not pressure, is the dial you adjust: keep the pressure setting the same and simply cook longer.

Worked example

A recipe says pressure-cook beans for 30 minutes, and you live at 5,000 ft. That is 3,000 ft above the 2,000 ft threshold, so 3 × 5% = 15% extra. Cook for 30 × 1.15 ≈ 34.5 minutes — about 4.5 minutes longer than the recipe states.

Frequently asked questions

Why does altitude slow down a pressure cooker?

The cooker adds a fixed amount of pressure on top of the surrounding air. At altitude that surrounding air is thinner, so the total pressure — and therefore the peak temperature inside — is lower, which lengthens cooking.

Should I raise the pressure setting instead of the time?

No. Most home cookers have a fixed high-pressure setting, so the reliable adjustment is to add time. Increasing time compensates for the slightly cooler cooking temperature.

Does this apply to electric multicookers too?

Yes. Electric pressure cookers reach a lower absolute pressure at altitude just as stovetop models do, so add the same percentage of time to the programmed cook.
