How it works

Liquid sweeteners: honey/maple ≈ 0.75 cup, agave ≈ 0.67 cup per cup sugar · Granular: coconut/brown 1:1, erythritol ≈ 1.33× · Stevia ≈ 1 tsp per cup

Sweeteners differ in both sweetness and moisture, so a swap is rarely one-to-one. Liquid sweeteners such as honey, maple syrup and agave are sweeter than sugar, so you use less — and because they add water, you cut other liquids and drop the oven temperature to stop over-browning. Sugar alcohols like erythritol are less sweet than sugar (use more), while concentrated stevia is hundreds of times sweeter, so a tiny amount replaces a whole cup but you lose the bulk, browning and structure sugar provides.

Worked example

A recipe needs 1 cup of sugar and you want to use honey. Multiply by 0.75 to get 0.75 cup (12 tablespoons) of honey, then reduce the other liquid in the recipe by about 3 tablespoons and lower the oven by 25 °F so it does not scorch.

Frequently asked questions

Why do I use less honey than sugar?

Honey is sweeter than sugar by volume and adds moisture, so 3/4 cup of honey matches the sweetness of 1 cup of sugar. Because of the extra water, reduce the recipe’s other liquid by about 3 tablespoons per cup of honey and lower the oven temperature by 25 °F.

Can I replace sugar 1:1 with stevia?

No — pure or concentrated stevia is 200–300 times sweeter than sugar, so only about a teaspoon replaces a full cup. You also lose the bulk, moisture and browning sugar provides, so most recipes need added volume (applesauce, yogurt or a bulking blend) to work.

Does swapping sugar change bake time or texture?

Often, yes. Liquid sweeteners make a moister, denser, faster-browning result; sugar alcohols can crystallize or feel cool on the tongue. Check for doneness a few minutes early and expect small differences in rise and color.
