How it works

Roasting time = weight × (13 min/lb unstuffed, 15 min/lb stuffed) at 325 °F · Fridge thaw = 24 h per 4 lb · Cold-water thaw = 30 min per lb

At a steady 325 °F oven, turkey roasts at roughly 13 minutes per pound unstuffed and 15 minutes per pound stuffed, since stuffing has to reach a safe temperature too. Thawing is the part people underestimate: the fridge needs about 24 hours for every 4–5 pounds, while a cold-water bath (changed every 30 minutes) thaws far faster at about 30 minutes per pound. Always confirm doneness with a thermometer — 165 °F in the thickest part of the thigh and in any stuffing.

Worked example

A 14 lb unstuffed turkey roasts for about 14 × 13 = 182 minutes, roughly 3 h. Thawing takes about 14 ÷ 4 = 3.5 days in the fridge, or 14 × 30 = 420 minutes (7 h) in cold water.

Frequently asked questions

What internal temperature means the turkey is done?

The USDA recommends 165 °F (74 °C) measured in the thickest part of the thigh, the wing and the thickest part of the breast — and in the centre of any stuffing. Times are only a guide; the thermometer decides.

Is it safe to thaw a turkey on the counter?

No. Room-temperature thawing lets the outer layers sit in the bacterial danger zone while the middle is still frozen. Thaw in the fridge, or in cold water changed every 30 minutes, and cook promptly after.

Why does a stuffed turkey take longer?

The stuffing absorbs heat and must itself reach 165 °F, which holds back the whole bird. That is why stuffed birds are figured at about 15 minutes per pound instead of 13, and many cooks bake stuffing separately for safety.
