How it works
Scale = (new diameter ÷ original diameter)²
A pan’s capacity depends on its area, which grows with the square of the diameter. So a 10-inch pan holds far more than a 8-inch — multiply the recipe by the area ratio and keep the depth similar.
Worked example
From 8" to 10": (10/8)² = 1.56, so use about 1.56× the batter.
Frequently asked questions
Do I change the bake time?
A larger, similarly deep cake bakes a little longer; start checking a few minutes past the original time.
What about square pans?
Use side length instead of diameter — area still scales with the square of the side.
