Egg Replacer Amount Calculator
Work out exactly how much of each egg-free replacer — flax, chia, applesauce, banana, aquafaba, yogurt or commercial powder — you need for any number of eggs.
How it works
Per egg: flax/chia = 1 tbsp meal + 3 tbsp water · applesauce/banana/yogurt = ¼ cup · aquafaba = 3 tbsp · commercial = 1½ tsp powder + 3 tbsp water
No single replacer does everything an egg does — eggs bind, add moisture, leaven and emulsify — so the best choice depends on the egg’s role in the recipe. Flax and chia "eggs" form a gel that binds well in dense bakes; purees like applesauce, banana and yogurt add moisture and work in cakes and quick breads; aquafaba whips into foam and shines where you need lift or a meringue. This tool simply scales the standard per-egg amount to the number of eggs you are replacing.
Worked example
A recipe needs 2 eggs and you want to use flax eggs. Per egg that is 1 tablespoon ground flax and 3 tablespoons water, so for 2 eggs use 2 tablespoons flax and 6 tablespoons water. Stir and let it sit about 5 minutes until it thickens to a gel, then mix it in.
Frequently asked questions
Which replacer works best for my recipe?
Match the egg’s job. For binding in cookies, burgers or dense loaves, use a flax or chia egg. For moisture in cakes and muffins, use applesauce, banana or yogurt. For lift and airy structure — meringue, mousse, light cakes — use whipped aquafaba. Most recipes tolerate replacing one to two eggs better than three or more.
How many eggs can I replace before a recipe fails?
Recipes with one or two eggs convert most reliably. Beyond that, the eggs are usually doing critical structural work, and swaps can turn out gummy or flat. If a recipe needs three or more eggs, look for a version designed to be egg-free rather than scaling a replacer up.
Do flax and chia eggs need to rest?
Yes. Combining 1 tablespoon of the ground seed with 3 tablespoons of water and letting it sit 5 to 10 minutes lets it form the gel that mimics an egg’s binding. Using it before it thickens gives weaker results.
