How it works

Brine per jar = jar volume × 0.45 (space around packed veg) · Total = per jar × jars · Vinegar & water split by the chosen ratio · Salt = total litres × g/L · Sugar = total litres × g/L

A quick pickle is just vegetables packed into jars and covered with a hot, seasoned brine, so the amount of brine you need depends on the jar volume and how tightly the vegetables are packed — the brine fills the gaps around them, roughly 45% of the jar. The backbone is the vinegar-to-water ratio: an equal 1:1 split is the all-purpose quick-pickle standard, more vinegar makes a sharper pickle that keeps longer, and more water makes a milder one. Salt and sugar are dosed per litre of finished brine so they scale cleanly with the batch. Always heat the brine to dissolve the salt and sugar and pour it over hot, leaving a little headspace at the top of each jar. These are refrigerator quick pickles; for shelf-stable canning follow tested processing times.

Worked example

Four 500 ml jars at a 1:1 ratio: brine per jar ≈ 500 × 0.45 = 225 ml, so 4 jars need about 900 ml of brine. Split evenly that is 450 ml vinegar and 450 ml water, with 0.9 L × 30 g/L = 27 g of salt and 0.9 × 40 = 36 g of sugar.

Frequently asked questions

How much brine do I need per jar?

Roughly 45% of the jar’s volume, because the packed vegetables take up most of the space and the brine only fills the gaps. Tightly packed jars need a little less, loosely packed jars a little more.

What vinegar-to-water ratio should I use?

A 1:1 ratio is the classic quick-pickle balance. Increase the vinegar for a sharper, longer-keeping pickle, or add more water for a milder, less tangy result.

Are these pickles shelf-stable?

No — this makes refrigerator quick pickles that keep for a few weeks chilled. For pantry-stable canned pickles you must use tested recipes and proper water-bath processing times.
