How it works

Rolls per person = 2.5 main / 1.2 starter × appetite · Pieces = rolls × 8 · Cooked rice = rolls × 120 g · Dry rice = cooked ÷ 2.5 · Fish = rolls × 45 g

A standard maki roll is cut into six to eight pieces, and a person eating sushi as a meal comfortably manages two to three rolls — call it 2.5 as a planning figure. As a starter, closer to one roll each is right. Each roll uses one sheet of nori and about 120 g of seasoned rice; short-grain sushi rice expands to roughly two and a half times its dry weight once cooked and seasoned, which is why the dry amount looks small. Fillings are lighter than they seem, around 45 g per roll, so a little fish goes a long way.

Worked example

A sushi dinner for 4 with normal appetites: 2.5 rolls each × 4 = 10 rolls (about 80 pieces). That needs 10 nori sheets, roughly 480 g of dry sushi rice, and about 450 g of fish and fillings.

Frequently asked questions

How many pieces are in a roll?

Most home rolls are cut into six or eight pieces. This calculator assumes eight, so if you cut into six you will have slightly fewer pieces from the same number of rolls.

How much dry rice per roll?

About 48 g of dry short-grain rice per roll, which becomes roughly 120 g once cooked and seasoned with the vinegar mix.

Can I use this for hand rolls?

Hand rolls (temaki) use about half a nori sheet and less rice each, so count two hand rolls as roughly one maki roll when planning.
