How it works

Dumplings per person = 13 main / 5 starter × appetite · Total = round up(per person × people) · Wrappers = total × 1.1 · Filling = total × 17 g · Sauce = people × 40 ml

Dumplings are small and moreish, so as a main meal people happily eat a dozen or more — twelve to fourteen is a solid planning number, dropping to about five as a starter. Buy roughly 10% more wrappers than dumplings, because the first few always tear while you find your folding rhythm. Each dumpling holds about a tablespoon of filling, or roughly 17 g, so the total filling weight scales directly with the count. Dipping sauce is generous by nature; around 40 ml per person keeps everyone happy without a puddle left over.

Worked example

A dumpling dinner for 5 with normal appetites: 13 each × 5 = 65 dumplings. Buy about 72 wrappers, mix roughly 1,105 g of filling, and set out around 200 ml of dipping sauce.

Frequently asked questions

How much filling goes in one dumpling?

About a level tablespoon, roughly 17 g. Overfilling makes them hard to seal and prone to bursting, so err on the modest side while learning.

Do steamed and fried dumplings differ in count?

Not really — the count is driven by appetite, not cooking method. Potstickers can feel a little more filling because of the crisp base, but the same numbers work.

Can I freeze extras?

Yes. Freeze uncooked dumplings on a tray until solid, then bag them. They cook straight from frozen with a couple of extra minutes.
