How it works

Per person × appetite: broth 650 ml · meat 220 g · vegetables 250 g · noodles/tofu 110 g · dipping sauce 60 ml

Hot pot is a long, grazing meal, so quantities run higher than a plated dinner — people keep cooking and eating for an hour or more. Budget around 650 ml of broth per person; it reduces as it simmers and you will top it up with hot water or stock. Thin-sliced meat and seafood are the centrepiece at roughly 220 g each, with a generous spread of vegetables and mushrooms at about 250 g to balance the richness. Noodles or tofu go in toward the end to soak up the flavoured broth, and each guest wants their own bowl of dipping sauce.

Worked example

A hot pot for 6 with normal appetites: about 3.9 litres of broth to start, roughly 1,320 g of sliced meat, 1,500 g of vegetables and mushrooms, and around 660 g of noodles and tofu, plus a dipping sauce for each person.

Frequently asked questions

Why so much broth per person?

The broth simmers the whole meal and reduces steadily, and you add ingredients continuously. Starting generous — and keeping a kettle of hot water nearby to top up — stops the pot from drying out.

Do a split spicy-and-mild pot need more broth?

A little. A divided pot has two smaller compartments, so start each side full and top up more often, but the total per person stays about the same.

When do I add the noodles?

Near the end. By then the broth is rich with the flavours of everything cooked before, and the noodles or tofu soak it up beautifully.
