How it works

Servings = guests × drinks · Bottles = ceil(total oz ÷ 30) · Each add-in = per-bottle amount × bottles

Sangria is built around the wine bottle: a standard 750 ml bottle plus fruit, a shot or two of brandy and orange liqueur, a little sweetener and a splash of soda at the end stretches to about six generous glasses. Scaling is just a matter of counting how many bottle-batches your headcount needs and multiplying every add-in to match. Let the wine, brandy, liqueur, sugar and fruit macerate together for a few hours (or overnight) so the flavours marry, then add the club soda and ice only when you pour so the sparkle survives.

Worked example

For 12 guests at 2 glasses of 5 oz, that is 24 servings = 120 oz. Each bottle-batch makes about 30 oz, so 120 ÷ 30 = 4 bottles. Multiply the per-bottle add-ins by 4: 8 oz brandy, 8 oz orange liqueur, 6 cups fruit, 8 tbsp sugar and 16 oz club soda.

Frequently asked questions

Which wine is best for sangria?

A dry, fruity, unoaked red such as Garnacha (Grenache), Tempranillo or an inexpensive Rioja is traditional and works beautifully — there is no reason to use an expensive bottle since fruit and spirit reshape the flavour. For white or rosé sangria, reach for a crisp Albariño, Sauvignon Blanc or dry rosé.

How far ahead should I make sangria?

Make the wine, fruit, brandy, liqueur and sweetener portion 2 to 24 hours ahead and refrigerate so the fruit macerates and the flavours meld. Hold back the club soda and ice until serving; adding them early makes the sangria flat and watery.

What fruit works best?

Firm fruits that hold up to soaking are ideal: orange and lemon slices, apple and pear chunks, and berries. Softer fruits like peaches and grapes are great too but break down faster, so add them closer to serving if you want them to look fresh in the glass.
