How it works

Powdered sugar = butter × ratio · Milk = butter × milk% ÷ 100 · Total = butter + sugar + milk · Cups ≈ total g ÷ 230

American buttercream is built on a sugar-to-butter ratio by weight: the classic 2:1 gives a stable, pipeable frosting, dropping to 1.5:1 for a less sweet and softer result or up to 2.5:1 for a stiff, sturdy icing that holds sharp edges. A splash of milk or cream — usually a few percent of the butter weight — loosens it to spreading consistency. Add liquid gradually at the end; you can always thin further but re-stiffening means beating in more sugar.

Worked example

For 227 g of butter (2 sticks) at a 2:1 ratio: powdered sugar = 227 × 2 = 454 g, milk at 5% = 227 × 0.05 ≈ 11 g (about ¾ tbsp). Total ≈ 692 g, or roughly 3 cups of buttercream — enough to fill and coat a two-layer 8-inch cake.

Frequently asked questions

What is the standard buttercream ratio?

Classic American buttercream uses about twice as much powdered sugar as butter by weight (2:1). Use 1.5:1 for a softer, less sweet frosting or 2.5:1 for a stiffer icing that pipes crisp details.

How do I fix buttercream that is too stiff or too soft?

Too stiff: beat in milk or cream a teaspoon at a time. Too soft: add more sifted powdered sugar, or chill the bowl briefly and re-whip — soft buttercream is often just warm.

How much does a cup of buttercream weigh?

Roughly 220–240 g. This calculator uses about 230 g per cup to convert the total weight into a cup estimate for planning against cake recipes.
