How it works
Recommended temperature and time by tea type; leaf ≈ 2–3 g per cup
Delicate teas (green, white) scorch in boiling water and turn bitter, so they need cooler water and shorter steeps. Black and herbal teas want near-boiling water and longer steeps to extract fully.
Worked example
Green tea: about 80 °C for 2–3 minutes, ~2 g of leaf per cup.
Frequently asked questions
What if I oversteep?
Tannins make it bitter and astringent. Remove the leaves at the end of the time rather than leaving them in.
Loose leaf or bags?
Both work with these times. Loose leaf usually gives more flavour for the same weight.
